Every Hungarian family has its own unique recipe for sour cherry soup. In Hungary, it is generally served before the main course.
Fruit soups are definitely quite different than any soup you have ever made. Very refreshing, with a nice balance of sweet and sour.
1 Simmer the cherries, sugar and cinnamon in the water until the cherries are tender
2 Remove the cinnamon
3 Meanwhile, in a medium bowl, mix sour cream with flour, salt, zest of 1/2 lemon, and sugar until smooth.
4 Thin with three tablespoons of water and stir into the hot soup
5 Heat to boiling
6 Chill. Before serving, stir in cream and wine
7 Cool to room temperature in an ice water bath.
8 Place plastic wrap directly on the surface of the soup and refrigerate until cold.
