Austrian Goulash

Preparation:
In a very large fry pot over medium high heat, add the bacon the onions, and the butter.

 Quickly cook sautéing the onions and the smoked bacon, moving them around the pan with a wooden spoon or spatula. It should take no more than 15 minutes. When onions become glossy, add the beef, sautéing with the onions for about 10 minutes, covered, until the meat is browned. Add the paprika stirring rapidly with a spoon. Immediately after paprika is absorbed, add the beef broth, potatoes, tomato, garlic, caraway seeds and the red pepper.

Salmon in Sauce

East India Fish

Curry Paste:

Ingredient:
4. 1/2 pound of cooked salmon
5. 1 ounce of butter
6. 2 small onions
7. 1 ounce of cocoanut,
8. 2 hard−boiled eggs
9. 1 pint of milk;10. paprika and salt to taste.
Salt and black pepper to tast

Preparation:

1.  Add the fish, curry paste, 1 teaspoonful of paprika and salt to taste.
2.  Let cook a few minutes, then stir.
3.  Serve very hot with toast with boiled rice.

Blender Hollandaise
(formerly also called Dutch sauce)

Put yolks, lemon juice and seasonings in blender. Heat butter and

water separately, taking great care not to burn the butter. Blend egg mixture on high for about half a minute, then with blender still on high, add boiling water and half of the butter, very slowly and in a steady stream, then the rest of the butter can be added more quickly. The heat from the boiling water and the hot butter should cook the yolks and create a satin- smooth mixture. Serve immediately or keep warm in a bowl set in another bowl of hot water.  More...

Baked Tomatoes with Provençale Stuffing
(French)

Heat the oven to 375F. Core tomatoes and scoop the insides out to

leave whole shells.

 

Heat skillet with oil to medium heat and sauté onion and garlic for

about 3 minutes. Stir in tomato, herbs and seasonings. Sauté for about 4 minutes or until wetness evaporates. Remove from heat and stir in breadcrumbs and cup measure of the Parmesan cheese. Reserve the rest of the cheese for later.  More...

Brioches French Bread

Brioche is a bread of French origin that is similar to a highly enriched pastry, and whose high egg and butter content (400 grams for each kilogram of flour) gives it a rich and tender crumb. Chef Joël Robuchon described it as "light and slightly puffy, more or less fine, according to the proportion of butter and eggs. It has a dark, golden, and flaky crust, frequently accentuated by an egg wash applied after proofing.
With a teaspoon scoop out pieces of dough about the size of an egg and form them into balls.  Place balls well-spaced on an ungreased baking sheet.

Stuffed Cabbage (Toltot Kaposzta)
(Hungarian)

A cabbage roll is a dish consisting of cooked cabbage leaves wrapped around a variety of fillings. It is common to the cuisines of the Central, Northern, Eastern and Southeastern Europe and much of Western Asia, Northern China, as well as parts of North Africa. 
Sauté onion in shortening until golden brown. Mix the pork, beef, rice and the egg together seasoning with the salt, pepper, bacon bits, onion, garlic, paprika, pepper, caraway seeds, salt and pepper and paprika. Remove core of the cabbage and steam it in water until leaves are soft and begin to separate from the head.

Hungarian Potato Dumplings

In a large saucepan or Dutch oven, boil potatoes in salted water until tender. Drain and allow to cool a few minutes. Immediately rice or grate warm potatoes into a large bowl. Add beaten egg, salt and flour and mix together with a wooden spoon or by hand until thoroughly incorporated. Cover loosely and let stand 15 minutes.

Place a large saucepan or Dutch oven with salted water on to boil while you form the dumplings. On a floured surface, take a portion of dough and roll it into a long pencil shape about 3/4-inch thick. Cut 3/4-inch slices and drop into boiling water. When the dumplings rise to the surface, they have finished cooking.

Chicken Marengo
4 Servings

2 pounds bone-in chicken pieces
2 cloves garlic crushed
½ teaspoon paprika
2 Tsp olive oil
1/2 small onion thinly sliced
1/4 tsp thyme dried
1/2 cup dry white wine
1 cup tomato peeled core chopped
1 Tsp tomato paste
1/2 small onion thinly sliced
¼ teaspoon dried marjoram
1 Tsp butter
1 green bell pepper, cut into strips
1 cup canned mushroom
3/4 cup black olives pitted
1/2   lemon
1 tablespoon olive oil
¼ cup parsley

  Chocolate Mint Mousse

English)

 

Chop the chocolate into small pieces and put into a bowl. In a medium saucepan, bring 2 inches of water to a simmer. Remove pan from heat. Set the bowl of chocolate over the hot water, stirring frequently until just melted. Remove bowl from hot water. Cool.

 

Bring the water in the saucepan back to a simmer. In a large bowl or in the bowl of a standing mixer, combine the egg yolks, sugar, and creme de menthe. Set bowl over simmering water and whisk constantly until egg mixture is slightly thickened, about 3 minutes.

Remove bowl from hot water. With mixer on medium speed, whisk the egg mixture until light and cool, about 4 minutes.

Choucroute Garnie 
(Austrian) 

Choucroute garnie (French for dressed sauerkraut) is an Alsatian recipe for preparing sauerkraut with sausages and other salted meats and charcuterie, and often potatoes.

Although sauerkraut/cabbage is a traditionally German and Eastern European dish, when Alsace and Lorraine became part of France following the Westphalia peace treaties in 1648, it brought this dish to the attention of French chefs and it has since been widely adopted in France 
 

Cover bacon strips with boiling water and set aside. Cut pork into 1"chunks. Slice knackwurst and sausages in half. Combine pork, knackwurst, and sausages and set aside. Drain sauerkraut, rinse in cold water and squeeze dry. Drain bacon and pat dry. Chop bacon.

(Dutch)

4 Servings
 

MEAT MIXTURE

1/4 c onions, chopped
1 Tsp oil
2 cup diced meat, ham, chicken or beef cooked
3 Tsp celery minced
1 Tsp green bell pepper minced
1 Tsp fresh parsley minced
1 tea spoon oregano dried
1 tsp paprika
or pinch cayenne pepper
2 tsp lemon juice
2 Tsp breadcrumbs
1 large egg

ROLLING MIXTURE

2 cups fresh bread crumbs
2 large eggs
Oil for frying
White Sauce
salt and black pepper to taste

Country Terrine
(French)

12 Servings

1. Grind liver, add cream, and let stand for 1 hour. Grind pork fat with pork.

2. In a frying pan, sauté onion in butter for 5 minutes. Add garlic, parsley, basil, and thyme. Remove from heat.

3. Heat oven to 350F.

4. In a large mixing bowl, combine liver mixture, pork, herb mixture, eggs, salt, pepper, flour, and brandy. Mix well. Fry a patty and adjust seasoning.

5. Put bacon in the bottom of a 9- by 5-inch loaf pan. Pour in meat mixture. Put bay leaves on top.     Seal tightly with foil, put loaf pan in a larger pan, and add water to come halfway up the terrine.

6. Place in the oven and cook for 1 to 1 1/2 hours. Remove from the water bath and cool completely. Place a brick on it weight down evenly and refrigerate overnight. Slice and serve.

Deboning the Chicken:

Using a sharp knife, cut off wing tips at the second joint. Cut through skin of the chicken down the center back. Separate flesh from backbone on one side with the tip of the knife. Then, following the shape of the bones, gradually ease flesh away from the bones, disjointing leg and wing bones from the carcass. Repeat process with the other side of the chicken. Holding the rib cage away from the chicken, cut breastbone from the flesh. Hold up the thigh with one hand, cut around the top of the bone to remove flesh, scrape down the bone to the next joint, cut around flesh again, scrape down to the end and remove bone.
